Turkey Sausage with spinach and Artichokes recipe -

Notes:
This is such a quick and easy recipe. It works for all phases of the South Beach Diet. And…… IT’S YUMMY

Servings: 4


Ingredients:
1 lb Italian Turkey Sausage Links
1/2 c chopped onion
1-2 cloves garlic finely chopped
1/2 c low fat/ low sodium chicken broth
1 large bag fresh spinach (large stems removed)
1 bag frozen artichoke hearts
sea salt and pepper to taste
two swirls of olive oil


Directions:
in a large saute pan with high sides heat the olive oil on med high. Add the sausage until browned on all sides. Remove to plate. Add onions and garlic until just transparent. DO NOT brown garlic. Add chicken broth and deglaze pan pulling up all yummy brown bits. Slice the sausage at a diagonal and place cut side down back into pan. Place artichokes on top of sausage cover and reduce heat to med low. Simmer for 10 min. Place all the spinach on top of current mixture (it will wilt down). Season with salt and pepper. Cover and simmer for another 10 min. Stir and serve. ENJOY
