Ridiculously easy; wonderfully sweet and moist; low in fat and calories. Does it get any better than this? :)I love this paired with greek yogurt and banana in the a.m. It’s guilt free, and it’s not sooo sweet that it has to be limited to dessert. Enjoy!
Servings: 16
Ingredients:
2 ? cup whole wheat flour
2 ? tsp baking powder
? tsp baking soda
? cup almond milk (I used a low fat vanilla almond milk)
1 cup honey
1 egg
2 tbsp flax meal (ground flaxseed) mixed with 6 tbsp water
Directions:
Mix your wet (almond milk, honey, egg, flax and water) and dry (flour, baking powder, baking soda) ingredients separately, then add wet to dry. Lightly spray your crock pot with a light or 0-calorie cooking spray. Pour the batter in, turn it on high, and let it do its thing!
My cake took exactly two hours. It was very easy to pop out; it held together very well, even when still hot.
Tips:
Don’t leave the house while your cake is a-cookin’. Honey burns faster than sugar; the edges of my cake did burn, though only slightly. Check the cake every so often after that first hour. Like I said, my cake took exactly two hours. Your fork or toothpick should come out clean from the center.
There are so many things that would make great additions to this recipe (walnuts, toasted almonds, dark choco-chips…). The possibilities are endless. If you find something you really like, let me know!
I think you could reduce the honey to get more of a whole wheat honey bread than a cake. Might be worth a try…
Frosting or glaze would be great, too. In the future (meaning, when I’m not limiting myself to 1,200 calories/day!), I’d love to try a chocolate glaze or icing. Yummmm…
