Notes:
This is a great filling meal using all whole ingredients and lots of spices for taste! If you don\\\’t have more than 10 spices I suggest you get yourself to the nearest bulk store and bulk up! It\\\’s the best way to make tastey food without all the extra calories and fat! You can easily make this a vegetarian meal by removing the chicken. It\\\’s still great without it!
Servings: 4
Ingredients:
1/2 cup chopped onion
1 clove garlic, minced
1 tablespoon olive oil
2-3 chicken breasts cut into 1 - 2 inch cubes
3 medium carrots, cut into 1-inch pieces
1 1/4 cups chicken broth
1 cup sliced celery
1/2 teaspoon salt
1/4 teaspoon ground cumin
? teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 teaspoon fenugreek powder
? teaspoon curry powder
? teaspoon ginger
1/8 teaspoon crushed red pepper
1 medium zucchini, cut into 1/2 x 1/2 x 1-inch strips
2 medium tomatoes - chopped (or canned diced tomato)
15-ounce can garbanzo beans (chick peas), drained
1 cup couscous
Directions:
1. Heat half of the oil in a large skillet.
2. Add the chickent and slightly cook (it will cook fully when sauteeing)
3. Add the remaining oil. Add the onion & garlic, carrots, chicken broth, celery, salt, cumin, coriander, turmeric, curry, feenugreek, ginger and crushed red pepper. Bring to a boil and then reduce heat.
4. Cover and simmer for about 10 mins. Add the zucchini, tomatoes and chick peas.
5. Cover and cook for 30 minutes more until chicken and vegetables are done.
Prepare couscous. You can serve the mix onto top of the couscous with a dallop of light plain yogurt!
