Black Bean Salsa recipe - Low Fat diet Recipes

Notes:
This is great for use with tortilla chips but I use it on salads, eggs, and so much more!

Servings: 6


Ingredients:
2 cloves of minced garlic (I use the jar stuff)
1 16oz can black beans, rinsed and drained
1 7oz can of shoe peg corn (I sometimes use the frozen corn)
1/2 cup of Italian Dressing (I use low fat or lite)
3 Tbsp. finely chopped cilantro
1 hot pepper
1 medium tomato finely chopped
1/2 green pepper finely chopped
1/2 red onion finely chopped


Directions:
Combine the first 6 ingredients. Put in fridge to marinate for 4 to 5 hours. Then combine remaining ingredients and toss well.
