Ingredients:
INGREDIENTS:
· 1/2 cup margarine (I use smart balance light)
· 8 ounces sliced mushrooms
· 2 tablespoons fresh lemon juice, about 1 lemon
· 1 teaspoon salt
· 1 large clove garlic
· 1/8 teaspoon pepper
· 2 to 3 pounds chicken parts or split chicken breasts
Directions:
Melt margarine over medium low heat in a heavy skillet; saute mushrooms until tender and golden brown. Add lemon juice, salt, garlic, and pepper; bring to a boil. Add chicken; bring to a boil again. Reduce heat, cover, and simmer for about 30 to 40 minutes, turning frequently.
I usually serve with a side dish of green beans sauteed with mushrooms. Delicious!
