Notes:
Light, fluffy, moist muffins that aren’t too sweet but contain plenty of banana flavor! The yogurt and mashed banana keep these muffins moist, and you won’t believe these are just 70 calories when you taste them!
Servings: 12
Ingredients:
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mashed ripe banana
2 tbsp sugar
1/2 cup yogurt of choice*
1 large egg
1/2 tsp vanilla extract
*NOTE: I use my own homemade yogurt, which is мейд from full-fat milk and contains about 80 calories in a 1/2-cup serving. You can use your favorite yogurt, including low fat, FF, flavored, or Greek varieties. OR, if you prefer, you can skip the yogurt altogether and use applesauce in this recipe.
Directions:
Preheat oven to 350 degrees and grease muffin cups with oil/butter of choice. (Please note that these muffins will stick to paper liners, so it's best to just spray your pan.)
In a medium bowl, mix together the dry ingredients (flours, baking powder, baking soda, salt).
In a separate bowl, beat together the wet ingredients (mashed banana, sugar, egg, vanilla, and yogurt). Beat in dry ingredients until just combined and scoop batter into prepared muffin cups.
Bake 15 to 25 minutes until a fork inserted into the center of a muffin comes out mostly clean. (The yogurt keeps these muffins pretty moist. I baked mine for just 15 minutes, but depending on your oven and your choice of ingredients, it may take up to 25.)
Makes 12 muffins.
