This is actually one of my favorite healthy breakfasts that really does fill you up. It’s also really easy and really fast to make.
Servings: 1
Ingredients:
1 very ripe plantain
butter
Directions:
1. Wrap the plantain with about two layers of paper towel.
2. Place the plantain in the microwave and heat for 5 minutes.
3. Carefully take out plantain, remove from paper towel and peel and place it on a plate.
4. Take a spoon full of butter and put it on the side.
5. You can add the butter however you want, but the way I usually eat it is to take another spoon, take a tiny scoop of the butter then slice a piece of plantain all in the same spoon as one bite.
