Notes:
This is a great, easy recipe that is delicious and even good the next day. I usually make a big pan of it for a couple days.
Servings: 5
Ingredients:
1 bag of washed, fresh green beans
1 bag of fresh broccoli/carrot mix
1 bundle of asparagus (chop it up)
1 can of artichokes (quarterd) (they may be rinsed to lose some sodium)
1 can of hearts of palm (optional) (chop them too)
2 tbsp of minced garlic
1/2 cup olive oil
lemon pepper seasoning
Directions:
Preheat oven to 400 degrees. First add garlic to olive oil and coat bottom of 9X11 casserole dish or pan. Add beans and asparagus and sprinkle lemon pepper over it. Then, add carrots and broccoli and drizzle some olive oil and lemon pepper over that. Then, add rest of veggies and use remaining olive oil with lemon pepper. (use lemon pepper to taste, as much as you want) Cover with aluminium foil and bake for 45 miniutes to 1 hour. Longer if you want some crispy veggies. I get the outside ones crispy and the inside ones nice and soft and tastey.
