Ingredients:
8 ounces cooked chicken breast, diced into 1-inch cubes
3 cups fresh watercress, washed and separated, thick stems removed
5 red radishes, chopped
2 stalks celery, chopped
1 medium pear, skin on, cored and diced
1/3 cup pine nuts
3 tablespoons chopped fresh tarragon, or I tablespoon dried
1/8 teaspoon ground cardamom
1 tablespoon walnut oil
Directions:
In a large mixing bowl, toss all ingredients together and serve
Vegetarians can omit the chicken and, add 1 cup drained cooked or canned beans such as chickpeas, black beans, or red beans. Toss together and serve. You can substitute any fresh or dried herb or spice such as ground fenugreek, dill, chives, cumin, etc. as desired to flavor the bean.
