For breakfast or snacks, or anytime. These are flourless, packed with fruits and veggies and are filling! My lastest batch had chopped up golden raisins and was amazing! The cinnamon and other spices in this also make them smell amazing and are a good smell for this autumn.![]()

Ingredients:
Dry ingredients: 2 cups steel cut oats, 3 cups instant oats, 1/4 cup flaxseed ground, 1 tablespoon cinnamon, 1teaspoon allspice and nutmeg, 3 tablespoons baking soda, 1 teaspoon salt. Mix together.
Directions:
Wet ingredients: 2 cups unsweetened applesauce, 2 eggs, 2 bananas, 3 large carrots grated, 1 zuchini grated, 1/2 honey, 1/4 agavenectar, teaspoon vanilla. Blend all wet ingredients, add to dry mixture, mix well,
then slowly add two cups soy milk. Mixture should be a bit runny. Spray muffin tins, then scoop two large tablespoons, cup pretty full, in each. Bake at 350 for 30 minutes. These are my power oatmeal muffins, so yummy, warm or cold and good for you. Add or chage to your liking, I've thrown pumpkin puree in, chocolate chips, fruit, nuts, whatever tickles your fancy. But it's a good way to get some yummy healthy things in your life!
