Ingredients:
1 lb boneless, skinless chicken breasts
Several burrito size tortillas
Any of the following: cheese, onions, beans, salsa, refried beans, Spanish rice, tomatoes, green chiles, etc.
1 can of green (or red) enchilada sauce
Directions:
Boil the chicken breasts until cooked (about 20 min), then shred. You can then add taco seasoning to the chicken, or leave it plain. Stuff the tortillas with chicken and any ingredients. We normally use a little cheese, onion & salsa. Roll burritos & place in a greased 9X13 pan. Pour enchilada sauce over the top of the burritos. Garnish with a little cheese, green chiles, salsa, or leave plain. Bake for about 10 minutes. We eat ours with a little fat-free sour cream on the side.
