Servings: 12-24
Ingredients:
1/3 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
1/3 cup sugar
1 1/2 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp table salt
2 large banana(s)
1 egg
1/2 cup unsalted butter
1/4 cup fat-free skim milk
3/4 cup milk chocolate chips
Directions:
Preheat oven to 350 degreess. Line 12 1/3 cup muffin cups with foil liners. Mix mashed bananas, egg, melted butter and milk in a medium bowl. Stir banana mixture into dry ingredients just until blended. (do not overmix) Stir in chocolate chips.
Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins unti tops are pale golden and insert a toothpick into center comes out with some melted chocolate attached, but no crumbs. Takes about 32 minutes. Transfer muffins to rack; cool.
