Notes:
This meal is great when you want something warm, rich, and full of flavor - not an everyday thing, but it’s not too bad. I calculated out the calories per serving with the labels on the food I used and it comes out to 491.5 calories - which includes a pork chop and it makes a little more than 1 cup of rice (my favorite part) per serving. I usually serve it with sauteed spinach or steamed broccoli to get some greens.
You can cut the butter in half or use a substitute. I’ve used less butter to save on calories and it still tastes great, not sure about the substitute. Also, I’ve used both brown and white rice - I love them both, use which ever you prefer or if you have a lower calorie rice use that.

Ingredients:
4 lean pork loin chops (3 oz. each ~ 184 calories each)
1 can Campbell's french onion soup (45 calories / serving)
1 can Campbell's beef consomme (20 calories / serving)
1 cup long grain white or brown rice (600 calories / cup uncooked rice)
8 Tbsp. Land O' Lakes Light butter (50 calories / serving)
Directions:
Spray a deep baking dish with Pam (I use Organic Olive Oil Pam) - just enough to prevent the dish from sticking to the dish.
Brown both sides of each pork chop, about 2 minutes on each side.
Place both cans of soup, rice, and pork chops in the baking dish - THEN place the butter (unmelted) in the center of the baking dish.
Cover the dish with aluminum foil, and bake at 350 degrees for 45 minutes.
