Aunt Vicki's Healthy Cookies recipe - Diet, Easy Diet Recipes

Notes:
These cookies are peanut buttery and good.

Servings: 5 Dozen


Ingredients:
3/4 cup peanut butter
3/4 cup honey
3/4 cup granulated sugar
2 egg whites or 1 egg
1/4 cup fat-free milk
3 tbls. canola oil
2 tsp. vanilla extract
3 cups quick oats, uncooked
1 3/4 cups whole wheat flour
1 tsp baking soda
1 cup raisins
1/2 cup coarsely chopped dry roasted peanuts


Directions:
In a large bowl, beat peanut butter, honey and sugar with an electric mixer until creamy. Add egg whites, milk, oil and vanilla, mix well. Combine oats, flour and baking soda and add to the peanut butter mixture. Mix well. Stir in raisins and peanuts. Cover and chill at least 30 minutes. Heat oven to 375 F. Drop dough by rounded tabls. onto ungreased cookie sheets. Bake 7 to 9 mins. Makes about 5 dozen.
