Notes:
This is adapted from an old weight watchers receipe, it is so good I eat it even when I’m not dieting.
Depending on what type of diet you are doing adjust the quantities to match.
I’ll post the amounts I usually use when I make it for myself but it can easily be мейд as a family meal or shared if you have a smaller appetite
Servings: 1
Ingredients:
1 small onion
1 red pepper
1 yellow pepper
1 green pepper
1 can chopped tomatoes
Dried herbs (to taste)
Tomato puree (to thicken)
1 can beans (kidney/butter/cannolini/mixed)
1 portion cooked pasta (penne works well)
1/2 slices of bread (granary or wholemeal is best)
Grated cheese
Directions:
Slice the onion and peppers
Soften in a non-stick pan
Add the chopped tomatoes, dried herbs and tomato puree
Cook out for 2 minutes on a medium heat
Drain, rinse and add the beans
Cook for a further 3 minutes
Add the pasta, stir well
Transfer to an oven proof dish
Tear the bread into small chunks and place on top of the sauce
Finish with a sprinkling of grated cheese
Place in a hot oven until the bread is crunchy and the cheese is melted
