This recipe is not necessary healthy, but perhaps changes could be мейд to make it so. I know that homemade lasagna with meatsauce is pretty terrible, so I think this can be a nice change of pace. Plus it will give you some veggies at least!

Ingredients:
1 pound lasagna noodles
4 cups whole milk
12 tablespoons unsalted butter
1/2 cup flour
1 teaspoon black pepper
1 teaspoon nutmeg
1.5 pounds portobello mushrooms
1 cup parmesan cheese
1 tablespoon salt (plus extra for noodle water and mushrooms, if desired)
2 tablespoons olive oil for sauteing (extra for noodle water, if desired)
Directions:
Oven will be 375 degrees.
1.) Boil water for noodles. (1 tablespoon salt and olive oil optional) Boil noodles until done, about 10 minutes.
2.) Use two pans for sauce. Simmer 4 cups of whole milk in one pan and take off heat. In another pan, melt 1 stick of butter. When melted, add the half cup flour and stir continuously for one minute. Add the warm milk into the flour and butter. Add 1 tablespoon salt, 1 teaspoon black pepper, and 1 teaspoon nutmeg. Stir this mixture constantly for 4 or 5 minutes, using a whisk as it thickens to break up lumps. When sauce is thick, turn off heat and set aside.
3.) Melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add half of the mushrooms (about 3/4 pound) and saute for about 5 or 6 minutes. Repeat with other half of mushrooms. While cooking mushrooms, you can sprinkle with salt for flavor, if desired.
4.) Assemble the beast! Place some sauce on the bottom of the pan so noodles don't stick. Add a layer of noodles, sauce, mushrooms, and 1/4 cup of parmesan cheese. Repeat 2 more times. Top with a last layer of noodles, sauce and a final 1/4 cup of parm cheese.
5.) Bake at 375 degrees for 40-45 minutes.
