Notes:
This is a very quick and easy low-fat asian inspired chicken recipe. To keep it low carb serve with steamed broccoli.
Servings: 4
Ingredients:
4 chicken breast halves
2 scallions cut into pieces
2 garlic cloves minced
2 tbs minced ginger
4 tbs low sodium soy sauce
2 tbs lemon juice
2 tbs sesame oil
1/2 tsp black pepper
Directions:
In a bowl combine the soy sauce, lemon juice, sesame oil with the scallion, garlic, ginger and black pepper. Mix well. Now pour this mixture over the chicken, cover, and place in the refrigerator. Allow chicken to marinate at least 30mins. (the longer the better).
Spray a non-stick skillet with cooking spray. Heat the skillet on med-high until hot. Add the chicken and allow to cook 4-5 mins on both sides until done. Enjoy!
