My favorite veggie side, goes great with anything!
Servings: 4
Ingredients:
2 - med or large zucchini squash
1 - large red bell pepper
1 - 8 oz. container of button mushrooms (sliced)
1 tbsp. olive oil (may need a bit more, depending on the size of your zucchini)
1 tbsp. Butter Buds butter flavoured powder
salt and pepper to taste
Italian seasoning to taste (about 1/2 tsp. probably, but I don't measure)
Directions:
In a large skillet or saute pan, heat oil on med-high heat. Cut zucchini into quarters lengthwise and cube. Cut red pepper into slices. Add zucchini to pan and saute for about 2 minutes, add pepper and mushrooms and saute for another 4 or 5 minutes, adding seasoning and butter buds toward the end. Serve hot and enjoy!
