Notes:
I eat this on the South Beach Diet….you can have beans on any phase of this diet. I like to make a batch of this and eat it for lunch during the week. I freeze any leftovers; freezes well. It\\\’s filling and carries me through the day. Good for any low fat diet….lean protein, veggies and good carbs!
Servings: 6
Ingredients:
1 1/2 cups green peppers, chopped
1 medium onion, chopped
1/2 tsp olive oil
1 1/2 lb 93 percent lean ground turkey
2 garlic cloves, minced
1 tsp oregano
1 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp salt
2 cans chicken broth (can use low sodium)
1 15 oz can cannellini beans, drain and rinse
1 15 oz can light kidney beans, drian and rinse
1 14 oz can diced tomatoes, drain well…optional…I buy the tomatoes with the green chili\\\'s in to add some spicy zing to the soup…watch sugar content
Directions:
In a medium pot, add oil and heat; brown turkey, peppers and onions until tender.
Add garlic, oregano, cumin, cayenne pepper, salt; mix and cook for a few minutes over medium heat.
Add beans, broth, tomatoes and bring to a boil.
Reduce heat and let it simmer, uncovered, for an hour.
