Notes:
My vegetarian adaptation to one of my favorite foods. I really enjoyed this and its fairly low in calories.
Servings: 2
Ingredients:
1 small onion diced
1 small bell pepper diced
1 clove of garlic diced
1 inch of ginger root diced
1/2 lb firm tofu
4 tablespoons Light Teriyaki Sauce
1/4 c. chopped celery
2 tbsp ginger powder
Cooked Brown Rice
2-4 tsp olive oil
Directions:
1. Place oil in a pan and allow to start to heat up.
2. Add in all veggies (not the tofu!)
3. Watch for the onions to start to soften and reduce heat to medium
4. Put ginger powder over the tofu.
5. Add tofu into the mix and allow to heat up for a minute or two
6. Add in the teriyaki sauce and allow to heat for about 5 minutes or so until the teriyaki sauce has cooked into the tofu.
7. Serve over the brown rice.
