Notes:
This is a good thing to eat on cold days. I sometimes like to sprinkle some parmesan cheese on it. Mozzerella cheese works too. The pot I use is HUGE (3 gallons?) this stuff freezes well.
Servings: 10
Ingredients:
1/4 head cabbage, cut up
2 big cans of diced tomatos, basil garlic and oregano flavor
1 carton mushrooms
1 zuchinni and 1 yellow squash cut up in half moons
baby carrots to taste
1 onion, cut up
celery if you must
water enough to fill up about 1/4 of your soup pot
Directions:
Put all the veggies in a big pot and filll it with water about 1/4 full. Simmer covered on stove medium heat, adding more water if needed.
Cook about 2 hours until veggies are tender.
