Ingredients:
1/4 cup onions, chopped
1 tablespoon butter
3 eggs, separated
1 to 2 cups chopped spinach, cooked and drained
1/3 cup parmesan cheese, grated
2 tablespoons margarine
2 tablespoons flour
1 cup low fat milk
1/2 teaspoon salt
1/8 teaspoon pepper
Directions:
Preheat oven to 350 degrees.
In small skillet saute onion in butter. In larger saucepan for white sauce, melt butter, stir in flour and heat until bubbly. Gradually add milk or cream, stirring constantly; cook 1-2 minutes. Season with salt and pepper.
Steam spinach 1-2 minutes. If creamy souffle is desired chop spinach in blender. Beat egg yolks until thick and lemon-colored. Stir into hot white sauce along with spinach, onions, and cheese. Fold in egg whites beaten until stiff, not dry, peaks are formed; turn into greased 1 1/2 qt casserole.
Set in pan of hot water and bake about 50 minutes.
