Notes:
A good way to use up some of that fresh garden squash and have your “fried squash fix” without all of the extra fat and breading.
Servings: 4 servings
Ingredients:
3 yellow squash, cut into circles
1 large onioin, chopped
1 tsp. minced garlice
Drizzle (about 1/2 Tbsp.) Extra Virgin Olive Oil
Directions:
Drizzle the EVOO into the fry pan. Add your squash and onion and saute until just starting to get tender. Then add the minced garlic and cook until the veggies get to desired tenderness.
This makes a great summer side dish. It has LOTS of flavor without all of the heavy breading and extreme fat that is associated with breaded fried squash. Enjoy!
