Notes:
Cornmeal Breaded-Skinless Chicken Breast Strips. Instead of using flour & milk to dip & bread the chicken breast strips, I used cornmeal & cold water instead. In a medium sized bowl I added my seasonings & corn meal together. Then I took each chicken strip & ran them under cold water & rolled them in the prepared seasoned cornmeal. I used a medium iron cast skillet to saute the chicken strips, using med heat so as not to cook the chicken strips to fast. Saute the chicken strips until golden brown. Then serve along with your other nutritous side dishes(serving size is 3 chicken strips). I мейд a garden salad with fresh diced tomatoes, sliced cucumbers & freshly diced onions w/a teaspoon of fat free catalina dressing & some homemade mashed potatoes. It was so Yummy & I didn’t feel stuffed(nor was I feeling like I had deprived myself).

Ingredients:
2 large skinless Chicken Breast. 1 1/2 cups of yellow cornmeal. 1 teaspoon of Lemon Pepper. 1 teaspoon of Season All Salt & 1 teaspoon of black pepper. 1/4 cup vegetable oil.
Directions:
First rinse your Skinless Chicken Breast under warm water. Next cut chicken breast meat in 1/4 inch strips. Next, in medium bowel, mix together your cornmeal & seasonings. (in the mean time have your skillet warming on the stove top on med heat) once you have done this add your 1/4 cup vegetable oil into the warmed skillet. After you have done this, take & rinse your chicken strips under coldwater, roll them individually into your seasoned cornmeal mix, slowly lie your chicken strips into the skillet.( Make sure you turn chicken strips frequently so they don't brown unevenly). It takes 25 minutes to evenly brown & saute your chicken strips. Then serve with your favorite healthy side dishes. Makes four servings.(3 strips make a serving).
