chicken and veggie stir fry…very useful! recipe - Low Fat diet Recipes

Notes:
there’s alot of ways you can use this recipe…dinner over rice or pasta, or lunch in a wrap to make veggie and chicken fajitas! i love this recipe while im on a diet and my boyfriend loves it while he’s not!

Servings: 3-5


Ingredients:
2 zucchini
1 red onion
1 yellow squash
1 green pepper
1 chicken breast
1 jalepeno pepper (optional)


Directions:
bake chicken prior to preparing stirfry. while chicken is baking, chop all above veggies into small but still chunky pieces. first, cook green pepper and red onion in a skillet with olive oil until the onion begins to lose a little color, then set aside. then cook hte squash and the zucchini in the skillet with the jalepeno pepper. take these out and set them aside. cut up the chicken into small chunks and put into skillet with oil (not too much to keep the fat content down!) after a minute or so, add the peppers and onions back in with the chicken, let cook for about 3 minutes, then add the squash and zucchini. let cook for 5 minutes.
season to taste. ( I added alot of black pepper, adobo, a little chili powder and cumin)
serve over brown rice, over whole wheat pasta, by itself, or place inside a whole wheat wrap for a hearty and delicious lunch on the go!
