Notes:
This dish is something I love to get at Luby’s but I bet mine is a lot less fattening as they use bacon grease and very large bacon pieces.
Servings: 6
Ingredients:
1 head green cabbage
1 tomatoe
1 tbsp bacon crumbles optional
1 tbsp light butter or margerine
Salt and pepper
Directions:
cut cabbage head into large bite sized peices, keep the outer green leaves as much as possible as the have the most nutrients, trim away any browning or bad parts. Cut out the thickest pieces if you dont like them, the bottom center 1 inch of each leaf. For only two people I actually use only the outter most leaves, and maybe 3-4 light green inner ones. (Then I make coleslaw witht he inner parts!). Dice tomato into large pieces.
Place bacon crumbles and 1 tbsp margerine in a very large saute pan and melt. Place cabbage and tomato on melted butter. Sprinkle to taste with cracked pepper and sea salt. Over medium heat, quickly saute while stirring often -almost like a stir fry. I like mine pretty crispy so I saute about 4-5 minutes or less. Remove from hot pan to stop cooking or it could get soggy. The tomato adds water when cooking to make a light juice or sauce so you could even do this with out any butter I bet, maybe just spray pam to prevent sticking….you can also leave out the bacon.
