Notes:
I like to have a box of these colourful peppers on хэнд or in the fridge, perfect for pulling out as a warm snack, or eaten cold (although you might want to slightly warm them in the microwave to take the edge of the chill if they have been in the fridge)
Servings: 4
Ingredients:
3 peppers, red, yellow & orange
2 sprigs of fresh rosemary
1 stalk of fresh basil
2 sprays of extra virgin olive oil
Black pepper
Directions:
Cut peppers in to large sized chunks, mix in with herbs, season with pepper and place in an oven proof tin. Spray on only 2 sprays of olive oil, mix well and put in the oven at 100 C.
Take out and mix after 30 mins, then return to the oven.
When your kitchen smells delightful and the peppers are just starting to collapse in on themselves, remove from the oven.
Divide into 4 portions, equal in colour, eat one and save the others for another time.
Do not freeze.
