Servings: 4
Ingredients:
1 spray cooking spray
1 small garlic clove, minced
1 package of frozen mixed vegetables, chopped onion and bell pepper mixture
1 pound uncooked lean ground beef (with 7% fat)
14 1/2 oz canned diced tomatoes, with chipotle chiles
1 cup canned crushed tomatoes, fire-roasted
2 tsp chili powder, medium heat suggested
1/4 tsp dried oregano, crushed
1/2 tsp table salt
1/4 tsp black pepper
15 oz canned pinto beans, drained and rinsed
Directions:
Cover the bottom of a large skillet with the cooking spray. Heat over medium heat. Cook minced garlic and frozen veggies, stirring occasionally, for about 3-5 minutes. Be sure the veggies are thawed out. Mix in the beef, breaking it up with a spatula or spoon as it begins to brown. While the beef browns, be sure to mix it in with the veggies.
Once the beef has been browned, mix in the rest of the ingredients. Mix well cooking over a high heat. Once the chili has thickened, the chili is complete.
Feel free to add fat-free shredded cheddar for additional flavoring. Regular diced tomatoes and crushed tomatoes are sufficient for a non-spicy version
